Lentils get overlooked an awful lot in American cuisine, which is a shame, because they are just plain tasty. And cheap. And require very minimal labor to prep. This simple dish is a pretty great meal all on it’s own–just top off with your favorite hot sauce and enjoy. You can also use it as a hearty, filling side for a bigger meal. It also transports nicely for lunches…and if you want to pair it with some greens and a poached egg and call it breakfast? We’ve heard worse ideas.
Lentils With Carrots
This recipe is easy to prepare and a great basic recipe! If you want a little more kick, dress it up with your favorite hot sauce. You can serve it up as a side or as a main dish—just adjust portions appropriately.

Ingredients
- 3 cups water
- 3 cups finely diced carrot
- 1 cup brown lentils
- ¼ cup minced onion
- ½ tsp. salt
- 1 bay leaf
- 1 Tbsp. butter
Directions
- Combine everything but butter in a saucepan and bring to a boil. Reduce heat and simmer until lentils are tender and liquid is absorbed (25-30 minutes)
- Discard bay leaf and stir in butter to serve.
