If you’re looking for a delightful appetizer, this broiled zucchini with the tangy dill sauce will fit the bill.
Ingredients
- ½ cup plain, non-fat Greek yogurt
- 2 tsp. finely chopped fresh dill
- 1 clove garlic, grated

- ⅛ tsp. kosher salt, divided
- ¼ tsp. freshly ground black pepper, divided
- 1 lb. zucchini
- 1 Tbsp. olive oil
Directions
- Preheat broiler.
- In a small bowl, whisk together the yogurt, dill, garlic and lemon juice. If necessary, thin with water to a pourable consistency. Season with salt and pepper.

- Place zucchini in an oven-proof skillet or pan and broil, flipping occasionally, until slightly charred and tender (10 minutes).
- Serve zucchini warm with chilled yogurt-dill sauce.
