Zucchini Brownies

Banana and dates bring a double burst of fruit sweetness to these protein-filled and richly chocolate brownies that you can enjoy as a guilt-free treat in your healthful diet.

Ingredients

  • 1 cup flour
  • 1 cup whole wheat flour
  • ¼ cup flaxseed meal
  • ½ cup canola oil
  • ⅓ cup skim milk
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ½ cup silken tofu
  • ⅓ cup cocoa
  • ¾ cup date paste
  • 1 banana, mashed
  • 1 cup shredded zucchini

Directions

  1. Preheat oven to 350ºF. Line a 9×13 pan with parchment paper.
  2. Mix dry ingredients in a food processor, puree all wet ingredients.
  3. Combine wet and dry ingredients thoroughly. Bake 25-30, until toothpick insert into center comes out with a fine crumb.
