Tip: To toast the nuts, place in a dry skillet over low heat and toast until just fragrant (2-3 minutes).
Ingredients
- ½ cup wild rice
- 1 Tbsp. olive oil
- ¼ onion
- ½ carrot, peeled
- ½ stalk celery
- 2 tsp. finely chopped scallions
- 1 apple, peeled and diced
- 1½ Tbsp. raisins
- 1 tsp. chopped fresh parsley
- 1 tsp. red wine vinegar
- 2 tsp. finely chopped shallots
- ½ tsp. salt
- Pepper, to taste
- 1½ Tbsp. chopped walnuts, toasted
Directions
- Cook rice according to package directions.
- While rice cooks, heat oil in a small pan over medium heat. Cook onion, carrot, and celery until tender (6-8 minutes). Set aside.
- When rice is done, fluff with a fork and gently stir in all ingredients.
