Weeknight Shakshuka

Shakshuka is a popular dish in the Middle East. Richly spiced tomato sauce is used to poach eggs. The dish is often served with a flatbread such as lavash.

Ingredients

  • 2 Tbsp. olive oil
  • 1 (16 oz.) bag frozen mixed peppers and onions
  • 1 (26 oz.) jar pasta sauce
  • 4 cloves garlic, minced
  • ½ tsp. smoked paprika
  • 1 tsp. cumin
  • ½ tsp. oregano
  • ½ lb. baby spinach
  • 1 (16 oz.) can reduced sodium white beans, drained and rinsed
  • 4 eggs
  • ½ cup shredded mozzarella

Directions

  1. Heat olive oil in a large skillet over medium heat. Cook frozen vegetables and garlic until softened (6-8 minutes).
  2. Stir in pasta sauce and spices. Bring to a simmer over medium heat, stirring occasionally (5-7 minutes).
  3. Stir in spinach and white beans. Simmer until spinach is wilted (3-5 minutes).
  4. Crack eggs into the sauce. Cover with a lid and cook until yolks reach the desired texture (5-8 minutes). Top with shredded cheese to serve.
