You will love this variation on pizza any night of the week. If you’re looking for something fun and different to throw on the grill, this recipe is perfect! Cook the veggies in a cast-iron skillet and use the grill instead of the oven to toast your breads and melt the cheese.
Ingredients
- 1 Tbsp. olive oil
- 1 clove garlic, minced
- 1 sweet onion, thinly sliced
- 1 bell pepper, thinly sliced
- 8 mushrooms, thinly sliced
- 1 cup baby spinach
- 4 large whole-grain naan
- 1 cup hummus
- 4 tsp. grated Parmesan cheese
- 1 cup shredded part-skim mozzarella
- 2 tsp. oregano
- ¼ tsp. red pepper flakes, or to taste
- 2 Tbsp. balsamic vinegar
Directions
- Preheat oven to 400ºF.
- Heat oil in a skillet over medium heat. Add garlic, onion, bell pepper, and mushrooms. Cook, stirring frequently, until soft (8-10 minutes).
- Remove from heat and stir in spinach. Set aside.
- Place naan on a baking sheet and bake until lightly browned (2-3 minutes).
- Spread naan with hummus, then top with cheese and grilled veggies. Sprinkle with oregano and red pepper flakes.
- Bake naan until cheese is melted (3-5 minutes). Drizzle with balsamic vinegar to serve.
