
Nothing beats a great homemade spaghetti sauce. When it comes to vegetarian pasta sauce, the key to flavor is a good mix of vegetables.
Ingredients
- 2 Tbsp. olive oil
- 2 small onions, chopped
- 2 garlic cloves, chopped
- 1¼ cups sliced zucchini
- 1 Tbsp. oregano
- 1 Tbsp. basil
- 8 oz. tomato sauce
- 6 oz. tomato paste
- 2 medium tomatoes, chopped
- 1 cup water
Directions
- In skillet, heat oil. Sauté onions, garlic, and zucchini in oil until onions are soft (5 minutes).
- Add remaining ingredients and simmer, covered, until vegetables are soft and cooked down (45 minutes). Use in any recipe calling for pasta sauce.
