Feta can add a lot of salty flavor, making it a great ingredient to include in a salad dressing. If you prefer little chunks of feta in your dressing, you can whisk together the dressing instead of pureeing it.
Ingredients
Feta Vinaigrette:
- 3 Tbsp. sunflower oil
- 3 Tbsp. olive oil
- ¼ cup crumbled feta cheese
- 1 Tbsp. cider vinegar
- 1 Tbsp. red wine vinegar
- 2 tsp. lemon juice
- 1 tsp. pepper
- ¼ tsp. salt
Salad:
- 8 cups mixed salad greens
- 2 cups sliced cucumbers
- 1½ cups halved cherry tomatoes
- 5 radishes, thinly sliced
- ¼ cup thinly sliced red onion
Directions
- Puree vinaigrette ingredients together in a food processor or blender.
- Toss salad ingredients with half the vinaigrette. Serve with the remaining vinaigrette on the side.
