The flavor of perfectly ripe tomatoes is brought out by broiling and garnished with an easy pesto. This is the ideal appetizer for a late summer shindig. Look for local tomatoes for the freshest flavor.
Tip: Tomatoes ripen towards the end of grilling season. If you have a grill pan, you can also make these on the grill.
Ingredients
Pesto:
- 3 cups fresh basil
- 2 cloves garlic
- ¼ cup pine nuts
- ¼ cup nutritional yeast
- ½ cup olive oil
Broiled Tomatoes:
- 4 medium tomatoes, cored and halved
- 5 Tbsp. + 1 tsp. panko breadcrumbs
Directions
- Process all pesto ingredients in a food processor until smooth.
- Place oven rack in the top position and turn broiler to high.
- Place tomatoes cut-side up in a baking dish. Divide pesto evenly between tomatoes and top with breadcrumbs. Broil until breadcrumbs are browned and pesto is bubbling (3-5 minutes).
