Ingredients
- 4 ears corn, cooked
 - 1 Tbsp. olive oil
 - 1 Tbsp. red wine vinegar
 - 3 tomatoes, chopped
 - 1 Tbsp. Parmesan cheese
 - 1 Tbsp. chopped fresh parsley
 
Directions
- Cut kernels off cobs. Mix all ingredients together.
 - Chill until ready to serve.
