An elegant meal that’s easy to prepare and delicious to eat. For a richer flavor, switch the regular paprika with smoked paprika–it’s the perfect pairing with roasted peppers.
Ingredients
Fish:
- cooking spray
- 4 (4 oz.) tilapia fillets
- ¼ tsp. pepper
- ¼ tsp. paprika
Topping:
- ¾ cup diced roasted red bell peppers
- 12 olives, chopped
- 2 Tbsp. minced green onions
- 2 Tbsp. chopped parsley
- 2 tsp. olive oil
- 1½ tsp. basil
- 1 lemon, quartered
Directions
- Preheat oven to 350ºF. Lightly spray a baking sheet with cooking spray.
- Place fish on the baking sheet and lightly spray with cooking spray. Sprinkle with black pepper and paprika.
- Bake until the fish flakes easily when tested with a fork (10-12 minutes).
- While fish bakes, stir together remaining ingredients except lemons.
- To serve, squeeze a lemon wedge over each fillet. Top with equal amounts of the pepper-olive mixture.
