Peanut butter balanced with a little soy sauce for umami and salt, a little vinegar for acid, and a little honey for sweetness makes an amazing Thai-inspired sauce for noodles and veggies.
Tip: If you have any leftover sauce, the extra will keep nicely in the fridge for about a week.
Ingredients
Sauce:
- ¾ cup natural peanut butter
- ¼ cup cider vinegar
- 2 Tbsp. honey
- 2 Tbsp. low sodium soy sauce
- ½ cup water
Noodles:
- 1 lb. buckwheat soba noodles
- 1 cup shredded cabbage
- 2 carrots, shredded
- 2 scallions, chopped
- ¼ cup fresh cilantro
- 2 Tbsp. toasted sesame seeds
Directions
- Whisk together sauce ingredients and set aside.
- Cook noodles according to package instructions.
- Toss noodles and remaining ingredients with sauce, adding the sauce a bit at a time until you’re happy with the level of moisture and flavor. Serve immediately.
