Sweet Potato Wedges with Apple Cider Reduction

Forget yam casserole with marshmallow on top. Forget sweet potato fries. Once you taste the absolute perfection of the simple cider reduction, you’ll be ruined for other sweet potatoes for life.

Tip: The cider reduction gels as it cools, so be sure to serve it while it’s fresh and hot.

Ingredients

  • 2 sweet potatoes
  • Cooking spray
  • ¼ tsp. salt
  • 2 cups apple cider
  • ¼ tsp. almond extract

Directions

  1. Preheat oven to 350ºF.
  2. Spray sweet potato wedges with oil, place on a baking sheet, and sprinkle with salt. Bake until tender (40-45 minutes).
  3. While potatoes are cooking, simmer apple cider in saucepan over medium heat until reduced to a thick syrup, stirring occasionally (45-50 minutes). Remove from heat and stir in almond extract.
  4. Serve syrup hot as a dip for the wedges.
