Sweet Potato Waffles

Any fruit that’s in season will work well with these waffles as long as you keep the pieces small enough to cook quickly. If you want to swap in a slower-cooking fruit like apples, cook the fruit with the noodles before transferring the mix to the waffle iron.

Ingredients

  • 1 medium sweet potato, spiralized
  • 1 tsp. cinnamon
  • 1 egg, beaten
  • ½ tsp. vanilla
  • ½ cup blueberries
  • 1 Tbsp. maple syrup (optional)

Directions

  1. Preheat a waffle iron.
  2. Toss sweet potato noodles with cinnamon. In a large skillet, cook until softened (5-7 minutes).
  3. Move to a bowl and toss with egg, vanilla and blueberries. Coat the waffle iron with cooking spray and pour the mix into the iron. Cook according to manufacturer’s instructions.
  4. Serve hot, topped with maple syrup, if desired.
