Any fruit that’s in season will work well with these waffles as long as you keep the pieces small enough to cook quickly. If you want to swap in a slower-cooking fruit like apples, cook the fruit with the noodles before transferring the mix to the waffle iron.
Ingredients
- 1 medium sweet potato, spiralized
- 1 tsp. cinnamon
- 1 egg, beaten
- ½ tsp. vanilla
- ½ cup blueberries
- 1 Tbsp. maple syrup (optional)
Directions
- Preheat a waffle iron.
- Toss sweet potato noodles with cinnamon. In a large skillet, cook until softened (5-7 minutes).
- Move to a bowl and toss with egg, vanilla and blueberries. Coat the waffle iron with cooking spray and pour the mix into the iron. Cook according to manufacturer’s instructions.
- Serve hot, topped with maple syrup, if desired.
