Sweet Potato Veggie Patties

Sweet potatoes and white beans create a filling, nutritious base for a Cajun-flavored burger that bursts with flavor. Enjoy this treat on a whole-grain bun like a burger or use it to top a salad or grain bowl.

Tip: If you don’t want to plan to have leftover mashed sweet potatoes to make this recipe with, microwave a large sweet potato, turning once, until soft (4-5 minutes).

Ingredients

  • 2 (15.5) cans cannellini beans, drained and rinsed
  • 2 cups mashed sweet potato
  • 2 Tbsp. tahini
  • 1 tsp. Cajun seasoning
  • ¼ cup flour
  • 1 cup panko
  • 1 Tbsp. safflower oil

Directions

  1. Mash together everything except panko and oil.
  2. Form mixture into 8 (4″) patties and coat in panko.
  3. Heat oil in a skillet over high heat. Cook until browned on both sides (3-4 minutes per side). Serve hot.
