Ingredients
- 1 cup farro
- 1 cup peas
- ½ tsp. salt
- ¼ tsp. pepper
- 1 cup cubed watermelon
- 1 cup chopped fresh parsley
- ¼ cup shaved Pecorino Romano cheese
Directions
- Cook farro according to package directions. In the last 2 minutes of cooking, add peas. Drain and rinse with cold water.
- Combine farro mixture with remaining ingredients, except cheese, and toss well to combine.
- Garnish with cheese to serve.
