This dessert happens to be vegan and gluten-free…and also completely delicious. Take advantage of the availability of cranberries to enjoy this as a decadent holiday treat.
Ingredients
- 2 cups apples, sliced
- 2 cups pear, sliced
- 1½ cups cranberries
- 1 (15 oz.) can pineapple chunks in 100% juice, juice reserved
- 1 Tbsp. lemon juice
- ¼ cup brown sugar
- 1 tsp. cinnamon
- ¼ tsp. nutmeg
- ¼ cup olive-oil based butter substitute, melted
- 1 cup walnuts, chopped
Directions
- Preheat oven to 300ºF.
- Toss the fruit with the lemon juice.
- Whisk together reserved pineapple juice, brown sugar, cinnamon, nutmeg, and melted butter substitute until the sugar is dissolved.
- Toss fruit with sugar mixture and pour into a 9″x12″ baking dish.
- Top with walnuts and bake until fruit is tender and sauce has reduced (1 hour).
