Cauliflower cooked with tomatoes, onion, and simple spices is a humble-yet-delicious side dish that’s perfect to pair with any simple entree.
Ingredients
- 1 head cauliflower, chopped into 2" pieces
- 1 Tbsp. olive oil
- 1 onion, chopped
- ¼ tsp. garlic powder
- 2 large tomatoes, chopped
- ½ tsp. pepper
- 1 Tbsp. parsley
- ¼ cup grated Parmesan cheese
Directions
- Cover cauliflower with 1″ of water in a saucepan and bring to a boil over medium heat. Cook until just tender (3-5 minutes). Drain.
- Heat oil in a large skillet over medium heat. Add onion and cook until tender (3-5 minutes).
- Add the garlic powder and cooked cauliflower to skillet. Stir until browned (2-3 minutes). Stir in the tomatoes and black pepper and cook until heated through (4-5 minutes).
- Sprinkle with parsley and cheese to serve.
