Creamy butter beans are a well-known treat in the south, but you can find them under the name of large lima beans outside of the south. Serve with a side of unsweetened cornbread and enjoy!
Ingredients
- 1 lb. large lima beans
- 1 Tbsp. vegetable oil
- ½ cup diced onion
- ½ cup diced celery
- ¼ cup diced carrot
- 2 cloves garlic, minced
- 1 tsp. thyme
- ¼ tsp. pepper
- 2 cups cubed ham
- 4 cups low-sodium chicken stock
- ⅛ tsp. salt-free Cajun seasoning
Directions
- Place the beans in a slow cooker.
- Heat a skillet over medium-high heat. Add the oil, onion, celery, carrots, and garlic. Sauté until onion is just tender (5-8 minutes).
- Add the vegetable mix and all of the remaining ingredients to the slow cooker. Add water as needed to cover the beans plus an inch.
- Cover and cook on LOW for 6-8 hours or on HIGH for 4-6. Check halfway through and add more water if needed to keep the beans from drying out. Beans are done when tender to the bite.
