Ingredients
- 1 lb. boneless beef roast, trimmed and cubed
- 5 medium carrots, sliced into ½" disks
- 2 small red potatoes, cubed
- 1 medium onion, diced
- ½ tsp. salt
- ½ tsp. dried thyme
- 1 bay leaf
- 2 (14.5 oz.) cans low-sodium diced tomatoes
- 1 cup water

Directions
- In a slow cooker, combine beef, carrots, potatoes and chopped onion. Sprinkle with salt and thyme. Add bay leaf, tomatoes with juice and water. Stir until all ingredients are combined.
- Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
- Remove and discard bay leaf. Stir in frozen peas and garnish with parsley if desired.
