You don’t need to give up on dessert just because sugar isn’t particularly healthy. Dried fruits that are naturally high in sugar, such as dates and raisins, can be turned into a concentrated paste that offers a brown sugar-like sweetness without completely removing the beneficial fibers and nutrients of fruit. When you use those to kick up the sugar content of natural fruit, as with this simple confit, you’ll have a sweet treat that you can enjoy guilt-free. Eat it by itself, use a few tablespoons to sweeten plain yogurt, or use it in place of syrup for French toast or waffles!
Ingredients
- 3 lb. tart baking apples
- ¼ cup raisin or date paste
- ½ tsp. ground cinnamon
- 1 tsp. vanilla extract
Directions
- Peel, core and slice apples.
- In a slow cooker, toss apples with raisin paste and cinnamon.
- Cover and cook on HIGH for 2-2 1/2 hours or on LOW for 4-4 1/2 hours. Apples should be tender, but not to the point of being pureed.
- Turn off heat and stir in vanilla. Serve warm or cold.
