Steak and potatoes is a crowd favorite, and this quick and easy variation will not disappoint. It’s a great way to stretch steak to included unexpected guests at the dinner table.
Tip: While you can cook the potatoes fresh for this dish, it’s best made with leftover baked potatoes that have had time to chill and firm in the fridge. Adding cold potatoes to the dish will give you a better crisp.
Ingredients
- 2 tsp. vegetable oil
- 1 garlic clove, minced
- 1½ lbs. sirloin steak, trimmed and sliced thin
- 1 tsp. vinegar
- ⅛ tsp. salt
- ⅛ tsp. pepper
- 2 large onions, sliced
- 1 large tomato, sliced
- 3 cups cooked, diced potatoes
Directions
- In large skillet, heat oil over medium-high heat. Sauté garlic until golden brown (30 seconds).
- Add steak, vinegar, salt, and pepper. Cook, stirring, until beef has browned (5-6 minutes).
- Add onion and tomato. Cook until onion is transparent (4-5 minutes). Stir in potatoes and fry until browned (3-4 minutes).
