Use the freshest lemon juice for the best possible flavor. To peel the chickpeas, pinch them between your fingers until the flesh pops out of the skin. It goes faster than you might think and is worth improved texture.
Ingredients
- 1 (15 oz.) can no-salt-added chickpeas
- ½ cup tahini paste
- 2 Tbsp. lemon juice
- 6 cloves garlic
- ¼ tsp. salt
- ¼ cup water
Directions
- Peel the chickpeas and discard the skins
- In a food processor, blend the chickpeas for a minute or so. Add the tahini, lemon juice, garlic and salt and blend until pureed.
- With the machine running, drizzle in water, 1 tablespoon at a time, until you get a very smooth mixture.
- Let rest and serve cold.
