Speedy and using nothing you can’t store in a freezer or pantry, this recipe is the perfect trick to keep tucked up your sleeve for impossibly busy nights. To round it out as a meal, add leftover chicken or a can of white beans.
Ingredients
- 16 oz. whole wheat rotini
- 1 Tbsp. olive oil
- 4 garlic cloves, minced
- 1 (24 oz.) jar Guiding Stars-worthy tomato sauce
- 12 oz. frozen spinach, thawed and drained
Directions
- Cook pasta according to package directions.
- While pasta cooks, in a medium skillet over medium heat, sauté oil and garlic until fragrant (5 minutes).
- Stir in sauce and spinach and heat through (4-5 minutes)
- Toss pasta with sauce and spinach to serve.
