This dinner is quick and easy and scrumptious. Roasting gnocchi gives it a nice crispy exterior that you’ll love. You can use fresh, frozen, or shelf-stable interchangeably for this recipe.
Ingredients
- 1 lb. gnocchi
- 2 bell peppers, chopped
- 1 pint grape tomatoes
- 1 red onion, chopped
- 4 cloves garlic, crushed
- 1 tsp. rosemary
- ¼ tsp. salt
- ¼ tsp. pepper
- 2 Tbsp. olive oil
- 2 Tbsp. sliced fresh basil
Directions
- Preheat oven to 450°F. Line a rimmed baking sheet with parchment paper.
- Place all ingredients except basil in a large bowl. Toss to combine and spread the mixture evenly on the baking sheet.
- Roast, stirring halfway through, until the gnocchi are toasted and the vegetables are caramelized (18-20 minutes).
- Serve hot, garnished with basil.
