This dish will win over even those who don’t think they like Brussels sprouts, and with a boost of protein from the pistachios, the leftovers makes a great snack…assuming there are any leftovers.
Tip: For a little extra sweetness, sauté the shallots lightly in part of the olive oil before roasting them with the Brussels sprouts.
Ingredients
- 3 cups halved Brussels sprouts
- 1 cup sliced shallots
- ½ cup pistachios
- ½ tsp. pepper
- ½ tsp. salt
- 3 Tbsp. olive oil

3 Tbsp. sherry
Optional Ingredients*:
- Pinch of chili flakes
Directions
- Preheat oven to 350ºF.
- Toss all ingredients together. Spread evenly on a baking sheet and roast, shaking halfway through, until brown and tender (30-35 minutes).
