Red Pepper Bisque

Ingredients

  • 1 cup yellow onion, chopped
  • 2 Tbsp. garlic, chopped
  • 24 oz. low-sodium vegetable broth
  • 3 cups red bell peppers
  • ¼ cup basil, chopped
  • 2 Tbsp. fresh thyme
  • ¼ tsp. sea salt
  • ½ tsp. black pepper

Directions

  1. In a pot, sauté sliced onions and chopped garlic until soft.
  2. Add vegetable broth, red bell peppers, basil, and thyme. Bring to a boil, then reduce to a simmer.
  3. Season soup with salt and pepper. Blend with an immersion blender until smooth.
