Ingredients
Dressing:
- ½ cup raspberries
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 small clove garlic, chopped
- ¼ tsp. salt
- ⅛ tsp. pepper
Salad:
- 8 cups mixed salad greens
- 1 mango, diced
- 1 avocado, diced
- ½ cup thinly sliced red onion
- 1 cup raspberries
Directions
- Process dressing ingredients in a blender or food processor until smooth.
- Toss salad ingredients gently with half the dressing to coat. Serve with remaining dressing on the side.
