Ingredients
- 2 tablespoons olive oil
- 1 shallot, diced
- 24 button mushrooms
- 3 cloves garlic, minced
- 1 teaspoon rosemary
- 3/4 cup roasted red peppers, diced
- 1/2 cup baby spinach, shredded
- 1/2 cup quinoa, cooked
- 1 tablespoon white wine vinegar
- 1/4 cup Parmesan cheese
Directions
- Preheat oven to 350 Degrees Fahrenheit.
- Heat oil in a large sauté pan. Cook shallot until translucent.
- Remove mushroom caps, dice the stems. Add mushroom stems, garlic and rosemary. Cook auntil liquid from mushroom evaporates.
- Stir in the peppers, spinach and quinoa. Sprinkle with vinegar and cook until absorbed.
- Stir in cheese and spoon filling into mushroom caps. Place on the baking sheet, and bake for 30 minutes. Serve warm.
