Quinoa Pizza Balls with Ranch Sauce

This is the kind of dish you’ll need to file under “peculiar but fun.” And flavorful. The hands-on messiness of forming the quinoa balls and the reliable kid-pleaser that is ranch dressing make these a great recipe to try with your kids.

Ingredients

  • Pizza Balls:

    • ½ cup quinoa
    • 1 (15.5 oz.) can red kidney beans, drained and rinsed
    • 10 fresh basil leaves, chopped
    • ¼ cup chopped fresh parsley
    • 1 tsp. Italian seasoning
    • ⅓ cup tomato paste
    • 1 tsp. minced garlic

    Ranch Sauce:

    • ¾ cup plain, low-fat yogurt
    • ½ tsp. dill
    • ¼ tsp. garlic powder
    • ¼ tsp. onion powder
    • ¼ tsp. salt

Directions

  1. Mix all ranch sauce ingredients together and store in the refrigerator until ready to serve.
  2. Cook quinoa according to package directions.
  3. Preheat oven to 350ºF. Cover a baking sheet with parchment paper and set aside.
  4. When the quinoa is finished cooking, transfer it to a medium bowl. Add the rest of the pizza ball ingredients and mash together to form a mixture that will stick to itself.
  5. Roll the mixture into 1″ balls and place on the baking sheet. Bake until lightly brown, turning once (20-25 minutes).
  6. Serve warm with chilled ranch sauce.
