Ingredients
Pizza Balls:
- ½ cup quinoa
- 1 (15.5 oz.) can red kidney beans, drained and rinsed
- 10 fresh basil leaves, chopped
- ¼ cup chopped fresh parsley
- 1 tsp. Italian seasoning
- ⅓ cup tomato paste
- 1 tsp. minced garlic
Ranch Sauce:
- ¾ cup plain, low-fat yogurt
- ½ tsp. dill
- ¼ tsp. garlic powder
- ¼ tsp. onion powder
- ¼ tsp. salt
Directions
- Mix all ranch sauce ingredients together and store in the refrigerator until ready to serve.
- Cook quinoa according to package directions.
- Preheat oven to 350ºF. Cover a baking sheet with parchment paper and set aside.
- When the quinoa is finished cooking, transfer it to a medium bowl. Add the rest of the pizza ball ingredients and mash together to form a mixture that will stick to itself.
- Roll the mixture into 1″ balls and place on the baking sheet. Bake until lightly brown, turning once (20-25 minutes).
- Serve warm with chilled ranch sauce.
