Quinoa, Mango & Black Bean Salad

This is seriously good eats. It’s a beautiful salad and the dressing is very tasty. The orange juice, cilantro, sesame oil, and garlic sing in your mouth.

Ingredients

  • Salad:

    • ½ cup quinoa
    • 1 cup water
    • 1 mango, diced
    • 1 bell pepper, diced
    • 1 cup cooked black beans
    • 2 scallions, thinly sliced

    Dressing:

    • ¼ cup orange juice
    • ¼ cup chopped fresh cilantro
    • 2 Tbsp. rice vinegar
    • 2 tsp. toasted sesame oil
    • 1 tsp. minced garlic
    • ⅛ tsp. salt
    • Pinch cayenne pepper

Directions

  1. Toast quinoa in a small dry saucepan over medium heat, stirring often, until it smells nutty (4-6 minutes). Add water and bring to a simmer. Turn heat to low, cover, and cook until the quinoa is tender (15-20 minutes).
  2. While quinoa cooks, whisk together orange juice, cilantro, vinegar, sesame oil, minced garlic, salt, cayenne in a medium bowl. Toss with mango, bell pepper, beans, and scallions.
  3. Add cooked quinoa to the mango mixture and toss to combine.
