This is seriously good eats. It’s a beautiful salad and the dressing is very tasty. The orange juice, cilantro, sesame oil, and garlic sing in your mouth.
Ingredients
Salad:
- ½ cup quinoa
- 1 cup water
- 1 mango, diced
- 1 bell pepper, diced
- 1 cup cooked black beans
- 2 scallions, thinly sliced
Dressing:
- ¼ cup orange juice
- ¼ cup chopped fresh cilantro
- 2 Tbsp. rice vinegar
- 2 tsp. toasted sesame oil
- 1 tsp. minced garlic
- ⅛ tsp. salt
- Pinch cayenne pepper
Directions
- Toast quinoa in a small dry saucepan over medium heat, stirring often, until it smells nutty (4-6 minutes). Add water and bring to a simmer. Turn heat to low, cover, and cook until the quinoa is tender (15-20 minutes).
- While quinoa cooks, whisk together orange juice, cilantro, vinegar, sesame oil, minced garlic, salt, cayenne in a medium bowl. Toss with mango, bell pepper, beans, and scallions.
- Add cooked quinoa to the mango mixture and toss to combine.
