This pumpkin-packed variation on the popular blender waffles is a perfect fall brunch. Top with a little peanut butter or serve with a side of warm, unsweetened applesauce for dipping. Sweet potato puree also makes a slightly sweeter alternative to pumpkin.
Tip: For reheating or just for extra crispy waffles, these can be toasted in a regular toaster.

- 1 cup rolled oats
- 1 cup pumpkin puree
- ½ tsp. pumpkin spice
Directions
- Preheat your waffle iron.
- Add all ingredients to a blender and puree together thoroughly.
- Spoon into waffle iron and cook according to waffle maker directions.
