Enjoy these fruity pumpkin bites as a quick and easy snack. Sweetened only with dates and a perfect size for small hands, these are a wonderful on-the-go snack for the little ones. With an excellent balance of spices, it’s a treat that any little trick-or-treater would be thrilled to receive.
Ingredients
- 1¼ cups dates, chopped
- ¼ cup pumpkin puree
- 1 Tbsp. chia seeds
- 1 tsp. ground cinnamon
- ½ tsp. ground ginger
- ¼ tsp. ground nutmeg
- ⅛ tsp. salt
- 1 cup old-fashioned oats
- 1 cup unsweetened coconut flakes, toasted
- 1 cup pumpkin seeds, toasted
Directions
- Combine the dates, pumpkin puree, chia seeds, cinnamon, ginger, nutmeg and salt in a food processor. Process until smooth.
- Stir in the oats, coconut flakes and pumpkin seeds. Cover and refrigerate until firm.
- Shape spoonfuls of the mixture into 1” balls. Store in the refrigerator.
