Fennel has a mild, sweet licorice flavor like the herb and seeds of the same name. It works beautifully with bitter greens and sweet pears in this salad.
Tip: To toast walnuts, spread on a baking sheet and bake at 350ºF until golden brown and fragrant, stirring once or twice (5-7 minutes).
Ingredients
- 6 cups mixed salad greens
- 1 fennel bulb, thinly sliced
- 2 pears, thinly sliced
- 2 Tbsp. grated Parmesan cheese
- ¼ cup chopped toasted walnuts
- 3 Tbsp. olive oil
- 2 Tbsp. balsamic vinegar
- Pepper to taste
Directions
- Top greens with fennel, pears, cheese, and walnuts.
- Drizzle with olive oil and vinegar. Top with pepper to serve.
