Homemade Peach Ice Cream

Peaches don’t have quite the creaminess of bananas, so they need a little help from coconut milk to achieve an ice cream-like texture when pureed. They do, however, have a high sugar content that makes them an absolute treat. The flavor of the peaches is unadulterated in this recipe, so make sure you taste test for ripeness before you forge ahead. If you put the mix back in the freezer, it will take on more of a popsicle quality, so eat immediately for a soft-serve experience or pour into popsicle molds for convenient cool treats later.

Ingredients

  • 2 cups peaches, sliced and frozen
  • ¼ cup unsweetened, low-fat coconut milk

Directions

  1. Puree ingredients in a food processor until perfectly smooth. Serve immediately.
