This is a big recipe suitable for the holidays or when you have a lot of squash on hand. You could swap out the garlic and parsley for sweeter spices like cinnamon or ginger.
Ingredients
- 5 lbs. winter squash, peeled, seeded and cubed
- 2 Tbsp. olive oil, divided
- 1 tsp. salt
- ¼ tsp. pepper
- 3 cloves garlic, minced
- 2 Tbsp. chopped parsley
Directions
- Preheat oven to 375°F.
- Toss squash with 4 teaspoons of oil, salt, and pepper. Spread evenly on a large baking sheet. Roast, stirring occasionally, until tender throughout (30-45 minutes).
- Heat the remaining 2 teaspoons of oil in a small skillet over medium heat. Add garlic and cook, stirring, until fragrant (1 minute). Toss the roasted squash with garlic, oil, and parsley.
