Oven-Baked Salmon with Snow Peas

Salmon cooked in foil packets is a mess-free way to cook a quick fish dinner. Foil packets make the dish easy to translate to a grill or campfire for delicious summer cooking. Serve with a baked potato or brown rice to fill out the meal.

Ingredients

  • 3 leeks, finely chopped
  • 2 carrots, sliced
  • ½ lb. snow peas
  • 1 (6 oz.) bag baby spinach
  • 1 lb. salmon fillet, quartered
  • 2 tsp. grated fresh ginger
  • 2 Tbsp. rice vinegar
  • 3 tsp. sesame oil
  • 1 Tbsp. lemon juice
  • 1 lemon, quartered

Directions

  1. Preheat oven to 450ºF.
  2. Tear off four large sheets of heavy-duty aluminum foil and lay each piece on your workspace.
  3. Divide the leeks, carrots, snow peas, and spinach into four equal portions and place a portion onto each sheet of foil. Top each mound of vegetables with a piece of salmon. Sprinkle with ginger, vinegar, and sesame oil.
  4. Fold the foil to form a packet around each piece of fish, leaving enough room for heat to circulate. Roll the edges to seal tightly. Place the packets on a cookie sheet and bake until the fish is cooked (10 minutes per inch of fish thickness).
  5. Sprinkle with lemon juice and garnish with lemon to serve.
