Ingredients
- 2 Tbsp. olive oil
- 1 large onion, thinly sliced
- 1 lb. skinless chicken breast, cubed
- 1 Tbsp. cornstarch
- 1 tsp. curry powder
- ½ tsp. salt
- ½ tsp. ginger
- ½ tsp. cumin
- 2 cups orange juice
- 1 bell pepper, chopped
- 1 can sliced water chestnuts, drained
- 3 cups broccoli florets
- Zest of one orange
Directions
- Heat a large skillet over medium-high heat. Sauté olive oil and onions until tender (4-5 minutes).
- Add chicken and cook, stirring, until browned (5-8 minutes).
- Stir in cornstarch, curry powder, salt, ginger, and cumin. Add orange juice and cook until thickened (4-5 minutes).
- Add vegetables and cook until just tender (8-10 minutes).
- Stir in zest and serve hot over your favorite whole grain.
