Ingredients

  • 2 Tbsp. olive oil
  • 1 large onion, thinly sliced
  • 1 lb. skinless chicken breast, cubed
  • 1 Tbsp. cornstarch
  • 1 tsp. curry powder
  • ½ tsp. salt
  • ½ tsp. ginger
  • ½ tsp. cumin
  • 2 cups orange juice
  • 1 bell pepper, chopped
  • 1 can sliced water chestnuts, drained
  • 3 cups broccoli florets
  • Zest of one orange

Directions

  1. Heat a large skillet over medium-high heat. Sauté olive oil and onions until tender (4-5 minutes).
  2. Add chicken and cook, stirring, until browned (5-8 minutes).
  3. Stir in cornstarch, curry powder, salt, ginger, and cumin. Add orange juice and cook until thickened (4-5 minutes).
  4. Add vegetables and cook until just tender (8-10 minutes).
  5. Stir in zest and serve hot over your favorite whole grain.
