Sheet-pan dinners are a fantastic way to feed the family a hot, filling meal without making a ton of dishes. This Tuscan-flavored chicken dish can easily be scaled up or down. If you’re scaling this beyond four servings, split the servings between two baking sheets.
Ingredients
- 2 boneless, skinless chicken breasts
- Cooking spray
- 1 tsp. lemon juice
- ¼ tsp. Italian seasoning
- 1 cup halved Brussels sprouts
- 1 cup grape tomatoes
- 4 cloves garlic, crushed
- 2 Tbsp. olive oil
- 4 Tbsp. balsamic vinegar
- ¼ tsp. salt
- ¼ tsp. crushed red pepper
Directions
- Preheat oven to 375ºF.
- Spray baking sheet with cooking spray.
- Place chicken on the baking sheet. Cover with cooking spray, lemon juice, and Italian seasoning. Toss together the remaining ingredients and add to the pan.
- Bake until veggies are softened and chicken reaches a minimum internal temperature of 165ºF, stirring veggies halfway through (30 minutes). Serve hot.
