Naked Chicken Fajitas

By “naked” fajitas, we just mean “fajitas without the tortilla.” Nothing scandalous going on here, unless it’s how scandalously delicious this meal is.

Ingredients

  • Black Bean Salsa:

    • 1 (15 oz.) can no-salt-added black beans, drained and rinsed
    • 1 avocado, cubed
    • 1 cup cherry tomatoes, quartered
    • ½ cup chopped cilantro leaves
    • 1 Tbsp. lime juice
    • ¼ tsp. salt

    Chicken Fajitas:

    • 2 Tbsp. olive oil, divided
    • 6 cloves garlic, minced
    • 1 Tbsp. chili powder
    • ⅛ tsp. pepper
    • ½ tsp. salt
    • 1 lb. boneless, skinless chicken breasts, sliced
    • 2 bell peppers, sliced
    • 1 onion, sliced

Directions

  1. Toss salsa ingredients together. Set aside.
  2. Mix 1 tablespoon oil, garlic, chili powder, black pepper, and salt in a medium bowl. Add the chicken and toss to coat.
  3. Heat remaining 1 tablespoon of oil in a large non-stick skillet over medium heat. Sauté the peppers and onions until tender and browning (15-20 minutes). Remove from the skillet and set aside.
  4. In the same skillet, sauté the chicken until fully cooked (3-5 minutes). Toss with peppers and onions and serve topped with salsa.
