Serve these spicy, saucy chicken thighs with a side of brown rice or quinoa on a bed of tender, young greens. If you like a milder dish, start with half of the chili paste adjust the sauce to taste before you put it on the chicken.
Ingredients
- 2 lbs. boneless skinless chicken thighs
- 3 Tbsp. miso paste
- 2" fresh ginger, peeled
- 6 garlic cloves
- 1 lemon, zest and half of the juice
- 2 Tbsp. vegetable oil
- 1 Tbsp. sesame oil
- 1 Tbsp. rice vinegar
- 1 Tbsp. low-sodium soy sauce
- 1 Tbsp. red chili paste
Directions
- Preheat the oven to 425º F.
- In a food processor, combine everything but the chicken into a paste. Toss over the chicken to coat.
- Place the chicken and sauce in a single layer on a large baking sheet. Bake for 30 minutes, flipping once after 15 minutes.
