Brochettes is another word for kebab, referring to the skewer itself, deriving from the French for “to spit.” These brochettes are a Middle Eastern-inspired dish which will quickly become a grilling favorite in your recipe repertoire. Couscous provides a fluffy and absorbent bed that will soak up the wonderful flavors.
Ingredients
Brochettes & Couscous:
- ½ cup couscous
- 1 lb. top sirloin steak, cubed
- 1 onion, cut into wedges
- 1 bell pepper, cut into 1" pieces
- ⅛ tsp. salt
Seasoning:
- 2 Tbsp. chopped fresh cilantro
- 2 Tbsp. olive oil
- 3 cloves garlic, minced
- 2 tsp. cumin
- 1 tsp. paprika
- ¼ tsp. red pepper
Optional Garnishes*:
- Fresh cilantro
Directions
- Cook couscous according to package directions.
- Combine seasoning ingredients in large bowl. Toss with beef, onion, and bell pepper to coat.
- Thread beef and vegetable pieces onto skewers (brochettes).
- Place brochettes on rack in broiler pan with the oven rack in the highest position. Broil on high for medium-rare to medium doneness, turning once (8-10 minutes). Season with salt.
- Place brochettes on top of couscous and sprinkle with cilantro, if desired.
