Marinated Black Bean Salad

You don’t know it yet, but this is the salad missing from your summer barbecue. You can technically skip the marinating stage and put this out on the table as soon as it’s done, but we recommend giving it the full time, if not more, for the best flavor.

Ingredients

  • Salad:

    • 1 (15 oz.) can low-sodium black beans, rinsed and drained
    • 2 cups corn
    • ½ cup minced green pepper
    • ½ cup minced red pepper
    • ½ cup minced onions

    Dressing:

    • 1 Tbsp. lemon juice
    • 1¼ tsp. parsley
    • 1 tsp. cumin
    • ½ tsp. garlic powder
    • 1 cup salsa
    • 2½ tsp. vegetable oil

Directions

  1. Combine salad ingredients in a large bowl.
  2. Whisk together dressing ingredients.
  3. Pour dressing over salad and toss lightly to combine.
  4. Chill for 2 hours before serving.
