Rice is a filling base for a salad that soaks up a delicious dressing to make a flavorful meal. You can also use leftover rice. We recommend using this recipe’s cooling method for bringing any leftover rice down in temperature quickly for good food safety practices.
Ingredients
Dressing:
- ⅓ cup orange juice
- 2 Tbsp. lime juice
- 1 jalapeño pepper, coarsely chopped
- 1 tsp. cumin
- 1 tsp. oregano
- 1 Tbsp. canola oil
- 2 Tbsp. chopped fresh cilantro
Salad:
- 1 cup brown rice
- 1 (15 oz.) can black beans, rinsed and drained
- ¾ cup diced mango
- ½ cup chopped plum tomato
- ⅓ cup chopped green onion
Directions
- Process together dressing ingredients in a blender or food processor until smooth and set aside.
- Cook rice according to package directions. When cooked, fluff with a fork, spread on a baking sheet, and refrigerate until cool (15 minutes).
- Toss all salad ingredients together. Toss with dressing to serve.
