Mango Rice Salad

Rice is a filling base for a salad that soaks up a delicious dressing to make a flavorful meal. You can also use leftover rice. We recommend using this recipe’s cooling method for bringing any leftover rice down in temperature quickly for good food safety practices.

Ingredients

  • Dressing:

    • ⅓ cup orange juice
    • 2 Tbsp. lime juice
    • 1 jalapeño pepper, coarsely chopped
    • 1 tsp. cumin
    • 1 tsp. oregano
    • 1 Tbsp. canola oil
    • 2 Tbsp. chopped fresh cilantro

    Salad:

    • 1 cup brown rice
    • 1 (15 oz.) can black beans, rinsed and drained
    • ¾ cup diced mango
    • ½ cup chopped plum tomato
    • ⅓ cup chopped green onion

Directions

  1. Process together dressing ingredients in a blender or food processor until smooth and set aside.
  2. Cook rice according to package directions. When cooked, fluff with a fork, spread on a baking sheet, and refrigerate until cool (15 minutes).
  3. Toss all salad ingredients together. Toss with dressing to serve.
