Start this oatmeal about eight hours before you want to eat it. Dress it up with fresh or frozen fruit and a tablespoon or so of nuts to round out the meal.
Ingredients
- 1 tsp. olive oil
- 1 cup steel-cut oats
- 3 cups water
- Pinch salt
- 1 cup skim milk
Directions
- Heat oil in a medium saucepan set over medium heat. Add the oats and fry them until they start smelling nutty.
- Stir in the water and salt. Bring to a boil.
- Turn off the heat and cover the pan. Leave it on the stove overnight.
- In the morning, uncover and stir in the milk. Bring back up to a simmer over medium heat.
