- ⅓ cup couscous
- ½ cup boiling water
- 2 tsp. canola oil
- ½ cup chopped red bell pepper
- 2 cloves garlic, minced
- 1 tsp. thyme
- 1 tsp. curry powder
- ½ tsp. cumin
- ½ tsp. allspice
- ½ tsp. ginger
- ½ tsp. salt
- ¼ tsp. pepper
- ¼ tsp. paprika
- ⅛ tsp. cayenne pepper
- 12 oz. 99% lean ground turkey
- 4 whole-wheat hamburger buns
- 4 tomato slices
- 4 lettuce leaves
Directions
- Combine couscous and water. Let stand until tender (5-10 minutes).
- Heat oil in a small skillet over low heat. Add bell pepper, garlic, herbs, and spices. Cook, stirring, until the bell pepper is slightly softened (1-2 minutes).
- Prepare a grill or preheat the broiler to high.
- Mix turkey, couscous, and bell pepper thoroughly. Shape into four ¾” thick patties. Grill or broil the patties, turning once, until they reach a minimum internal temperature of 165ºF (5 minutes per side).
- Build burgers on buns with tomato and lettuce.
