Herbed White Bean Hummus

White beans make a smooth, neutral base for any kind of seasoning you might care to add to your dip. Sesame seeds and herbs make this earthy and fresh. If you enjoy a little heat, garlic or crushed red pepper would play nicely here.

Ingredients

  • 2 cups canned, no-salt added white beans
  • 1 Tbsp. fresh lemon juice
  • 2 Tbsp. unhulled sesame seeds
  • 2 Tbsp. red wine vinegar
  • ½ tsp. Dijon mustard
  • 2 Tbsp. water
  • ¼ cup chopped fresh basil
  • 2 Tbsp. chopped fresh thyme

Directions

  1. Blend the beans, lemon juice, sesame seeds, vinegar, mustard, and water in a high-powered blender or food processor until smooth.
  2. Add the basil and thyme and pulse very briefly. Do not over-process; the herbs should be visible in small pieces.
