Lemon Scallop Kebabs

Grilling brings out the sugars in scallops and lemons alike, and when paired with more lemon and a little thyme, the flavor of these scallops will delight your mouth.

Tip: If you’re using wooden skewers, be sure to soak them in water for at least 10 minutes before threading on your scallops.

Ingredients

  • Dressing:

    • 3 Tbsp. lemon juice
    • 1½ Tbsp. chopped fresh thyme
    • 2 tsp. olive oil
    • 2 tsp. lemon zest
    • 1 tsp. pepper
    • ¼ tsp. salt

    Scallops:

    • 1¼ lbs. scallops, tough muscle removed
    • 1 lemon, cut into 8 wedges

Directions

  1. Preheat grill to medium-high. Place a fine-mesh nonstick grill topper on grill to heat.
  2. Whisk together dressing ingredients.
  3. Toss scallops with 2 tablespoons dressing. Thread scallops and lemon wedges onto skewers.
  4. Lightly oil the grill rack. Cook the kebabs, turning occasionally and basting with the reserved dressing mixture, until scallops are opaque in the center (8-12 minutes). Serve immediately.
