Grilling brings out the sugars in scallops and lemons alike, and when paired with more lemon and a little thyme, the flavor of these scallops will delight your mouth.
Tip: If you’re using wooden skewers, be sure to soak them in water for at least 10 minutes before threading on your scallops.
Ingredients
Dressing:
- 3 Tbsp. lemon juice
- 1½ Tbsp. chopped fresh thyme
- 2 tsp. olive oil
- 2 tsp. lemon zest
- 1 tsp. pepper
- ¼ tsp. salt
Scallops:
- 1¼ lbs. scallops, tough muscle removed
- 1 lemon, cut into 8 wedges
Directions
- Preheat grill to medium-high. Place a fine-mesh nonstick grill topper on grill to heat.
- Whisk together dressing ingredients.
- Toss scallops with 2 tablespoons dressing. Thread scallops and lemon wedges onto skewers.
- Lightly oil the grill rack. Cook the kebabs, turning occasionally and basting with the reserved dressing mixture, until scallops are opaque in the center (8-12 minutes). Serve immediately.
