Ingredients
Vegetables:
- 1 zucchini, sliced
- 1 yellow summer squash, sliced
- 1 medium eggplant, sliced
- ¼ cup chopped green onion
Marinade:
- 1 Tbsp. olive oil
- 3 Tbsp. balsamic vinegar
- 2 cloves garlic, crushed
- Pepper to taste
Directions
- Place the zucchini, squash, and eggplant in a large bowl.
- Whisk together marinade ingredients and pour over vegetables. Let sit for 30 minutes.
- Heat a grill to a medium-hot heat. Place the veggies on, brushing with extra marinade as needed. Cook until seared brown and tender, flipping once (2-3 minutes per side).
- Serve hot, garnished with green onions.
