Stuffed mushrooms are a great vegetarian dish that work well on the grill or under a broiler. Quick to cook, quick together, filling, and delicious: this is a recipe that’s well worth learning.
Ingredients
- 2 Tbsp. lemon juice
- 2 tsp. low-sodium soy sauce
- 1 tsp. olive oil, divided
- 4 large portobello mushroom caps
- ⅔ cup chopped tomatoes
- ¼ cup shredded part-skim mozzarella cheese
- ½ tsp. finely chopped fresh rosemary
- ⅛ tsp. pepper
- 1 clove garlic, chopped
- 2 tsp. minced fresh parsley
Directions
- Preheat grill to medium.
- Whisk together juice, soy sauce, and half of the oil in a small bowl. Remove mushroom stems and brush oil mix over both sides of mushroom caps.
- Place the mushroom caps, stem sides down, on grill rack. Grill until soft, turning halfway through (10 minutes).
- While mushrooms are cooking, combine the tomato, cheese, remaining half of the oil, rosemary, pepper, and garlic in a small bowl.
- Divide tomato mixture between mushrooms. Cover and grill until cheese is melted (3 minutes). Sprinkle with parsley to serve.
